La Cuvee Chateau de Combel la Serre from the Cahors region of southwest France is structured and dark, a bit gamey, screams out for food but still leaves you feeling refreshed. Delicious!
Winemaking
The Malbec grapes used in this wine are from different plots in the village of Cournou, and are thirty five year old vines planted on causse limestone and clay. The wine is aged for one year in old barrels of 225 and 500 litres. No oak is used for fermentation and the wines are not inoculated with yeasts – ambient yeasts used. No malolactic is used so the wine retains its freshness.
