Wine Making
We harvest the grapes by hand at the beginning of September, selecting the less-mature grapes. After the harvest, we immediatly crush and press the grapes to divide the liquid from the coloured substances of the grapes skins. The fermentation is very slow and it continues for about 10-15 days

Tasting Notes
It has a straw-yellow colour. It has mineral, winy and fruity flavours, in particular white fruits. It is dry and its main characteristics are the tasty, mineral and fresh flavours.
Serving Suggestion
As aperitif or with fish dishes. It is very good with fresh or marinated salmon. It is beautiful the pairing with cured fat meats as bacon, salami or lard. The recommended drinking temperature is 8°-10° C
Note
Biancheté is the white expression of Valpolicella. Produced through white vinification of Corvina grapes, it expresses his character letting remember its roots. The name Biancheté comes from “Bianchete”, that is the vineyard’s name where we select Corvina grapes. This ancient nickname has origin from the white colour of the soil
