The grapes are harvested once they reach the per-fect balance of acidity and sugar. They are sorted and destemmed. The maceration is managed at a temperature of 26 to 28° C, in small stainless-steel tanks, providing a precise winemaking. Floating skins are regularly pushed down into the fermenting wine. This extraction technique is called “Pigeage”. At the end of the process, a small part of the wine is aged under the influence of French oak, while the other part is kept on stainless-steel tank for 5 months, before blending and bottling.
