Wine Making
the lightly overripened grapes are harvested by hand in October. Later, we press the grapes and we put the pressings into steel tanks where juice ferments with grapes skins for about 20 days. During fermentation, the wine and the grapes skins are mixed daily by hand with pump-over into the lap and delastage to get the maximum out of the product
Ageing
About 3/4 years into small old french barrels
Tasting Notes
it has a deep garnet ruby red colour. It is intense and elegant and it has black cherry and violet flavours. On the palate it is dry, warm, soft, full bodied, elegant, powerful and persistent, with spicy flavours of pepper, cocoa and licorice
Serving Suggestions
Red meats, roasts and cheeses. The recommended drinking temperature is between 15°-18°C
Notes
In this red wine is represented Daniele’s ideal wine expression. We dedicate the IGT Brigasco to the Brigasca Land, which symbol was found on a stone of an internal wall in our Corte dei Merli. It is carved in tufa, our local stone. Certainly, it was realized by our ancestors that settle here from Brigasca Land about five centuries ago.
